Hi Ton,
First of all, the backgrounds should always be clickable.
We've already discussed having text outside buttons with no
backgrounds. It won't really work well because there will be no way to
clearly see which text relates to what number fields, especially bad
with multiple columns. I'll give an example. Look at the Dimensions
panel here:

You have some Resolution settings and some Framerate settings. Without
the backgrounds it'll actually look like the resolution number fields
relate to the framerate text labels.
If the text is outside, and if there are multiple columns, you need
some sort of visual clue to be able to tell what the text labels refer
to.
Regarding long names: One could add a rule that it's always the name
that gets truncated, not the value itself, even if the text is inside.
I've actually found that having the text outside doesn't allow for as
long names as having them inside, because there is slightly more
wasted space.
But, like I said, I'm fine with having the text both inside and
outside as long as it's completely consistent and absolutely clear and
unambiguous what's going on. The user must never be in doubt about
what value is being changed!
