It would be nice if Blender had the tools to unwrap a
mesh and generate a flattened 2d version that retains
the uv information for export to an image editor.

Is it possible to be developed from the save vertices groups function?

In face mode, press U, then select an unwrap mode. Goto the UV image editor screen, then do a print screen with all the faces selected (faces selected in the 3D window will display their corrosponding UV coords in the image editor). Open the screenshot in a program that supports layers, like the Gimp, or Photoshop.
Also, if you literally want a shaded, unwrapped mesh, I bdlieve their are several python scripts that will do this. Try searching around on Elysiun.
