No worries, I'm no hurry. There's plenty to keep me occupied.

I agree, a team of proof readers is probably wishing for a bit too much
at this point. Most of my contributions so far have been mostly proof
reading type stuff whilst I learn about blender and the wiki. I'm happy
to keep doing this for as long as possible as it'll probably be a while
before I can competently contribute to the more advanced functions.
Unfortunately, that's going to make my next suggestion seem a little
self-serving (not intentionally I swear! ;) )
One way to get more proof reading type corrections could be to exempt
these from review. Since these sort of edits are going to be based on
standard language/grammar rules, the folks who notice the mistakes are
going to make the appropriate corrections and shouldn't really need a
review (one assumes). It also avoids a situation where native speakers
have to get their language corrections reviewed by non-native speakers
(which seems a little silly and inefficient).
Plus it also lowers the barrier for entry for new contributors by
keeping parts of the wiki open, which should hopefully encourage more
people to get involved.
Another idea might be to have a targeted approach to fixing sections.
e.g have a month of modifiers or something, where we encourage people to
write, review and proof a group of related pages.
As for recruiting people, are you going to put the request out to areas
outside the mailing list e.g. blenderartists, blendernation etc?
Cheers
