I don't know the specifics about file formats for Z buffered images, but
so far I have seen it implemented as a simple gray scale image, one per
compositing channel.

Assuming that you are composing 2 subjects, The compositing app will
compare pixel by pixel from both Z-buffers, and the lighter one is the
one that goes on top of the other. Even been a simple method, complex
effects can be achieved this way, including volumetric fog and smoke.

At least, that is the way that Gimp's depth mask works, but I don't know
about other compositing software.
