Thanks a lot for all the feedback and input.

Ton, glad to read that you are willing to support this. I am aware that it will take time and effort to build something of value. But since I have a full-time job teaching Blender (lucky me :-)), I think it is doable. 
And I hope for support and contributions, so that this is going to be a joint effort rather than a one man show.

I am currently working on a first draft of the curriculum, which I will post asap. For a start, it is supposed to cover the basics of getting started with Blender. 
Summer break is just ahead, so it might take a while. I hope to publish something within the next 2-3 weeks.
